When you are having friends coming over for tea, this sandwich makes a perfect partner to go with it. It can be prepared quickly with very fewer ingredients. You can have as many variations with your favorite veggies. Let’s see how this is made;

PREPARATION TIME: 15 MINUTES
COOKING TIME: 5 MINUTES
INGREDIENTS:
- 4 potatoes boiled and mashed
- 1 cup cooked sweet corn
- ½ cup black olives sliced
- 2 tbspn. butter
- ½ tspn. salt
- 1 tspn. red chilli flakes
- 3 tbspn. tomato ketchup
- 2-3 tbspn. green chutney
- ¾cup grated mozzarella cheese
- ¾ cup thinly chopped green pepper
- 6 slices bread of your choice
METHOD:
- Start by boiling the potatoes either in microwave or on stove top. Transfer them to ice cold water, peel and mash the boiled potatoes. This will take 12-15 minutes.

- Simultaneously boil sweet corn, drain and set it aside.
- Now take a mixing bowl, add the mashed potatoes, boiled sweet corn, green pepper, black olives, 1 tbspn. of grated cheese, red chilli flakes and salt.
- Now add 1 tbspn. of tomato ketchup and mix well.
- Take a slice of bread, apply green chutney and then spread the vegetable stuffing, put some tomato ketchup and grated cheese. Close this with another slice spreads with green chutney and tomato ketchup.

- Grill the sandwich by applying some butter both the sides.
- Cut them and serve hot with a hot cup of chai.
