Methi Paneer Pulao- One pot meal

Methi Paneer Pulao is one of the healthier one pot meal with can me prepared with fewer ingredients. The aroma of the fenugreek along with paneer gives good nutrition in form of protein, calcium & iron and is very delicious to eat. Your family will love this this rice variety served with onion raita. So here is Methi Paneer Pulao Recipe, enjoy the cooking and eating.

PREPARATION TIME: 10 minutes

COOKING TIME: 12 minutes

SERVES: 10

INGREDIENTS:

  • 2 cups of methi/ fenugreek leaves

(Separated from their stem, washed, drained and roughly chopped)

  • 1 cup of cubed paneer
  • 1 cup of thinly sliced onions
  • 1 ½ tspn. of ginger garlic paste
  • 1 ½ tspn. chilli powder
  • ½ an inch cinnamon
  • 2 cloves
  • 1-star anise
  • 2 small bay leaves
  • 1 slit green chilli
  • 2 cups of soaked and drained basmati rice
  • 4 cups of water
  • Salt to taste
  • Oil as required

METHOD:

  • In an Instant pot, switch on the saute mode and pour some oil.
  • Once the oil is heated, fry the cinnamon, cloves, star anise, bay leaves and green chilli.
  • Next add onions and ginger garlic paste and fry till the onions turn light brown in color
  • Now add the diced paneer, fry a bit and then add the methi/fenugreek leaves and stir well.
  • Add chill powder, salt and turmeric (Optional) and saute for a minute.
  • Once all the ingredients are mixed well, add water and basmati rice and give it a quick stir.
  • Switch off the saute mode. Close the lid of the Instapot and turn the nozzle to sealing and pressure cook for 6 minutes.
  • Once done, give it a minute or two before you manually release the nozzle to venting.
  • Your super delicious Methi Paneer Pulao is all set to be served. Onion raita or even plain yogurt will be a good choice to go with it.

Tip: You may use any pressure cooker or electric pressure cooker to cook this recipe.
