Coriander Upma

Coriander Upma/ Green upma is a twist to the regular upma giving the flavor of fresh coriander. It’s as quick as the regular upma. It’s worth a try and for sure you will love it. This also makes a very good lunch box recipe.

PREPARATION TIME: 10 Minutes

COOKING TIME: 20 minutes

SERVES: 4

INGREDIENTS:

  • 1 Cup roasted rava/semolina
  • 8-10 springs of coriander leaves
  • ½ cup chopped onions
  • ¼ cup frozen green peas
  • 4 green chillies
  • 1-inch ginger
  • 4-5 curry leaves
  • 1 tspn lemon juice
  • 1 tspn. mustard seeds
  • ½ tspn. cumin seeds
  • 1 tbspn. channa dal
  • 1 tbspn. urad dal
  • 3 cups water
  • Salt to taste
  • Oil as required

To grind:

  • 8-10 springs of coriander leaves roughly chopped
  • 1- inch ginger chopped
  • 1 green chilli chopped
  • 1/3rd cup of Water

METHOD:

  • To begin, grind the coriander leaves, ginger and green chilli to a fine paste by adding a little water.
  • In a pan, dry roast the rava/semolina and set it aside to cool
  • In the same pan, pour some oil, once the oil is heated add mustard seeds and allow it to crackle. Add cumin seeds, urad and channa dal and fry till the dal changes color to golden brown. Now add the remaining green chillies and curry leaves and fry for a minute. Adjust the green chillies as per your spice levels.
  • Then add the chopped onions and green peas and fry till the onions are cooked.
  • Now add the coriander paste and mix well and cook it for 2 minutes.
  • Add the water and salt. Cover the pan with a lid and let it boil.
  • Add the roasted rava/semolina and mix well. Make sure to break the lumps if any.
  • Cover the lid and let it cook for 3-5 minutes. Add water if necessary.
  • Your yummilicious coriander upma is ready to be served. Goes well with boondi raita or even plain yogurt.
