Veggie quesadilla- Tex-Mex style

When you want eat restaurant style quesadilla at home, this recipe makes a great one! I tried my own version after conferring with my friend and it turned out delicious. My daughter loved it and wanted it for her lunch the next day too. Give it a try and I’m sure you won’t regret.

PREPARATION TIME: 10 minutes

COOKING TIME: 5 minutes

SERVING: 6 Quesadillas 

INGREDIENTS:

  • A packet of flour tortillas (Soft) from store
  • ¼ cup finely chopped green peppers
  • ¼ cup finely chopped orange peppers
  • ¼ cup finely chopped yellow peppers
  • ¼ cup finely chopped red peppers
  • 1 tomato finely chopped
  • 1/3 cup of chopped white onion
  • ¼ cup sweet corn (I have used frozen)
  • 1 green chilli minced
  • 1 garlic pod minced
  • 2 cups of shredded mozzarella cheese
  • Butter for roasting the tortillas
  • Black pepper & salt as per taste
  • 2 tbspn. olive oil

METHOD:

– In a pan, heat olive oil. Saute the chopped veggies of your choice, I have used green, red, orange, yellow peppers, tomatoes, sweet corn and onions.

–  Add minced garlic and green chilli. Mix well and add ground black pepper and salt.

–  Allow the veggie mixture to cool.

–  In a griddle, heat one side of the store brought tortilla (I have used Mission tortillas) and then roast both the sides with enough butter. Butter adds nice flavor and gives a nice color while roasting.

–  Spread the veggie mixture on one half of the tortilla and spread grated mozzarella cheese and fold it. Roast crisp on both sides.

–  Cut with a pizza cutter and serve hot with sour cream and salsa.
