Masala Rotti- Crusty & Crispy

This is a little twist to the regular akki rotti, makes an awesome breakfast and our family’s favorite. Every household has different ways of preparing the rotti’s, some use a parchment paper, silicone sheets or the tawa itself. I like making these on the tawa and it comes out very crispy and delicious with a dollop of ghee.

PREPARATION TIME: 15 minutes

COOKING TIME: 5 minutes

INGREDIENTS:

  • 2 cups of rice flour
  • 1 cup of shredded carrots
  • 1 cup of thinly chopped onions
  • 3 tbspn. of chopped coriander
  • ½ tbspn. of green chilli paste
  • ½ tspn. of cumin seeds
  • ½ tspn. of carom seeds
  • ½ tspn. salt or as required
  • 1-2 cups of water
  • Ghee/oil for roasting

METHOD:

  • Firstly, take an iron tawa and spray cooing oil and heat it a little and allow it to cool. This ensures that the rotti’s don’t stick to the tawa and comes out very well.
  • Take a mixing bowl, add the rice flour, chopped onions, shredded carrots, chopped coriander, green chilli paste, cumin seeds, carom seeds, salt and water and mix well to form a thick dough. After some time, the onions leave water, so make sure you have a tight dough.
  • On the tawa, spread oil and take a ball of the dough and pat it with your fingers to fill the tawa. You may dip your fingers in a bowl of water to ease the process.
  • Now, switch on your stove and roast the rotti’s while you smear some ghee. Cover the lid for a minute to make sure the rotti’s are cooked.
  • Once the rotti is roasted as per your preference, serve hot with ghee and any chutney powder of your choice.
