Fried rice is very popular in most of the restaurants and is a staple food in south-east Asian countries. This rice gives a nice flavor from the sauces and veggies and makes it our family’s favorite. It goes well with the Manchurian gravy giving you a restaurant meal satisfaction. Below is the recipe;
VEGETABLE FRIED RICE
PREPARATION TIME: 15 minutes
COOKING TIME: 30 minutes
Serves- 6
INGREDIENTS:
- 3 cups cooked long grain rice
- 1 cup finely chopped green beans
- 1 cup finely chopped carrots
- 3 tbspn. spring onions
- 2 tspn. finely chopped garlic
- 1 tspn. finely chopped spring onion bulbs
- 1 cup finely chopped cabbage
- ½ cup finely chopped green pepper
- 1 onion finely chopped
- 2 tbspn. chilli Sauce (store bought)
- 2 tbspn. soya sauce (store bought)
- 1 tspn. ground pepper
- Oil as required
- Salt to taste
METHOD:
- Cook the rice and set it aside. I have used long grain rice with 1:2 rice to water ratio.
- Heat a wok which is a little deep, it helps you saute the rice well. Pour some oil and after the oil is heated add chopped garlic and chopped spring onion bulbs and chopped onions and fry it onions change color. Adding a little salt helps to cook the onions faster.
- Now added chopped green beans, carrots and cabbage and fry till it cooks half and then added the chopped green pepper. Adding green peppers at a later stage will help to keep the crunchiness.
- Add the soya sauce and chilli sauce and mix well. Allow the sauces to combine with the veggies giving a nice aroma. Add the ground pepper and salt as per your taste.
- Mix the cooked rice with the veggie mixture and saute well. Let it cook for 3-4 minutes.
- Garnish with spring onions and you are good to serve the delicious fried rice.
MANCHURIAN GRAVY
PREPARATION TIME: 10 minutes
COOKING TIME: 20 minutes
SERVES: 6
INGREDIENTS:
- 1 cup fried French fries
- ½ cup onion diced
- ½ cup spring onions
- ¼ cup chopped carrots
- ½ cup halved zucchini
- ¼ cup diced green pepper
- 2 tbspn. tomato ketchup
- 3 tbspn. soya sauce
- 2 tbspn. corn flour
- 2 tbspn. minced garlic
- 1 green chilli finely chopped
- 2 cups water
- Oil as required
- Salt to taste
METHOD:
- Fry the French fries and keep it aside. I have used the store-bought frozen fries.
- Take a pan, add oil and after the oil is heated, add minced garlic and green chilli.
- Add diced carrots, zucchini, green peppers and onions and fry well.
- Once the veggies are fried well and add soya sauce and tomato ketchup and mix well. You may also use red chilli sauce if you want more spice in your gravy. Adding tomato sauce to this gravy will make it tastier and more cut off the bitterness from the sauces.
- Now add 2 cups of water and bring to a boil.
- Mix corn flour with some water and add a little by little to the gravy mixture and let it boil. You will start to see the gravy thickening and shiny.
- Add the fries and give it a nice mix and garnish with chopped spring onions.
- Serve this Manchurian gravy with fried rice.
