This is one of my favorite curry’s for dinner, it goes well with roti’s and jeera rice. I got introduced to this by my sister’s friend Rashmi akka, since then it’s been a big hit for many pot-lunches and has been kids favorite.

Preparation time- 20 minutes
Cooking time- 15 minutes
Serves- 4
Ingredients:
For grinding:
1 onion sliced
2 tomatoes sliced
2 tbsps. cashews
1 tbspn. ginger garlic paste
½ tspn. black pepper cons
2 green chillies
Fry all the above ingredients with little oil in a pan, allow it to cool and grind it to a smooth paste.
Vegetables (Chopped or diced)
2 medium sized potatoes
2 carrots
1 bunch of green beans
1 green bell pepper
1 cup of sweet corn (I have used frozen)
½ cup of green peas (I have used frozen)

Paneer (Indian cottage cheese) diced.
Spices
2 tbsps. of kitchen king masala
1 tbspn. of kasoori methi
1 tspn. of coriander powder
½ tspn. of garam masala
Salt to taste
1 tbspn. Fresh cream
Oil and butter as required
Method:
- In a wok, add butter and saute the diced paneer till its golden brown and set it aside. Be sure not to burn them
- In the same wok, add oil, chopped veggies and saute them by adding a little salt until its cooked or you can also choose to half cook the veggies beforehand.

- Then add the spices kitchen king masala, garam masala, coriander powder and fry for a minute.
- Now add the ground paste and mix well.
- Add fried paneer, salt and mix well and cook for 3-4 minutes.

- Now add the fresh cream and kasoori methi. Give it a stir and you are all ready to indulge the delicious veg kadai.
