Corn Paratha- A lunch box recipe

This delicious corn paratha is my daughter’s favorite, it requires the least ingredients and makes a healthy lunch box recipe. The filling can be prepared the previous night minimizing the morning lunch box hurdles. Saw this recipe in one of the popular Facebook groups by a fellow food enthusiast Rupa. Loved it instantaneously and since then has been on our weekly lunch box list.

PREPARATION TIME: 15 minutes

COOKING TIME: 5 minutes

INGREDIENTS:

  • 2 large potatoes, boiled and mashed
  • 1 cup of onions finely chopped
  • 1 cup sweet corn, steamed
  • 2 tbspn. of chopped coriander
  • 2 tbspn. of chopped mint leaves
  • 1 tspn. of red chilli power
  • ½ tspn. of garam masala
  • ¼ tspn. salt or as required
  • Whole wheat chapati dough as required
  • Oil and ghee as required

METHOD:

  • Firstly, mix the chapati dough with wheat flour, a little oil, salt and water. Mix well to form a soft dough and rest if for 10-15 minutes.
  • In a mixing bowl, take the mashed potatoes, onions, steamed sweet corn, chopped coriander and mint leaves, chlli powder, garam masala and mix well. The filling is now ready.
  • Now, roll the chapati dough to 3-4 inches and spread the filling and cover this with a similar dough circle. Press the edges and now roll the paratha. This method of rolling ensures there is no breakage.
  • Heat the griddle and roast the paratha using oil and ghee on both sides.
  • Now the extremely delicious and hot corn parathas are ready for lunch box as well as for a healthy breakfast.
